Goat Loin Roast

Goat loin chops are one of the most tender cuts and the equivalent of tenderloin filet in beef.  The mild-flavored 100% grass-fed goat chop is well suited for the grill. A light salt and pepper rub is all that is needed. 4 chops approximate 3/4 inch thick.

The rack of goat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French.  Goat racks are generally smaller than lamb racks and have less fat. Our half rack option is perfect for two. 100% grass fed goat.
