Leg of GoatOur leg of goat is center cut to provide the prime center section of leg. The rump and shank have been removed for easier cooking and consistently tender meat. This results in flavorful meat with a high meat to bone ratio. Rub with olive oil and your favorite spices. 100% grass fed goat.

Rack of GoatThe rack of goat is a delicious roast alone or 2 – 3 racks can be tied together to form an elegant crown roast. A full rack contains 8 ribs. The chine (feather bones) is removed for preparation to French. Goat racks are generally smaller than lamb racks and have less fat. Our half rack option is perfect for two. 100% grass fed goat.

Whole GoatPurchase a whole goat from us with only customer preferred cuts. Lead time for processing your goat may be 10 to 14 days depending on schedule. Weight range 24 – 26 lbs.
A standard whole goat includes:
2 Racks
8 Loin chops (4 packs of 2 chops)
4 Leg shanks
2 Leg roasts
2 Shoulder roasts
2-4 lbs bone-in meat for stew
Custom cuts are available for an additional $25 fee (choose custom option and add note on cuts desired).
Whole carcass for roasting (not cut up) is available as a custom order. Additional shipping costs are required due to over sized container requirement. Allow 2-3 weeks lead time.
